This meal is incredibly healthy, and naturally gluten free! Most of these foods help to boost your immune system. Click on the ingredients to learn more about what they do!

Broiled Salmon with Citrus Greek Yogurt Sauce:

Ingredients:

1 3-lb filet of salmon

Salt and pepper, to taste

Sauce:

1 cup low-fat Greek yogurt

2 tablespoons extra-virgin olive oil

2 tablespoons water

2 cloves of garlic, minced

1 tablespoon lemon zest

1 tablespoon lemon juice

¾ teaspoon salt

¼ teaspoon honey

Preheat broiler. Pat salmon dry, then season with salt and pepper. Place fish on a pan lined with tinfoil, then broil salmon for 7 minutes. Cover loosely with foil, then broil another 7 minutes until cooked through.

While salmon is broiling, combine all ingredients to make the sauce. Spoon generously over cooked salmon.

Roasted Broccoli:

1 large head of broccoli, rinsed and cut

Extra virgin olive oil

Garlic powder

Salt and pepper

Preheat oven to 425 F. Pat broccoli dry, then place on sheet tray lined with foil. Coat with olive oil, then season with salt, pepper, and garlic powder to taste. Roast until tender and brown, about 15-20 minutes.

Baked Sweet Potatoes:

4 large sweet potatoes

Preheat oven to 400 F. Wash potatoes, pierce with fork all over. Place on sheet pan lined with tinfoil, and bake until tender, about 1 hour.

You might notice that a lot of these foods are ANTI-inflammatory, which means you have less of an immune response. Why would we want to decrease inflammation? Isn’t it good to have an immune response?

Yes, it is! But sometimes your body goes a little overboard and creates a little bit too much inflammation. Further, patients with celiac disease often have more inflammation in their intestines in general, and so eating anti-inflammatory foods can help to combat that.
